U of M Offers Deer Processing Workshop

The Deer Processing Workshop offers a great opportunity for deer hunters, sportsmen, educators, consumers and those simply interested, to come to the University of Minnesota Meat Science Laboratory to learn the general principles of safe and wholesome venison processing from academic and industry professionals.

The program focuses heavily on hands-on demonstrations of all aspects of venison processing, from field dressing deer, to carcass fabrication, further processing, food safety and cookery methods. In addition to viewing live demonstrations, those in attendance will have the opportunity to participate first-hand in the fabrication of fresh venison products.

In addition to access to industry and academic professionals in a very practical setting, cost of the workshop includes all written materials, lunch consisting of venison products, refreshments throughout the workshop and a Minnesota Meat Science hat. We encourage you to register early as space is limited to 24 participants.
